These Lazy Enchiladas are a delicious, hassle-free twist on traditional enchiladas! Made with ground beef (or shredded chicken/turkey), tortilla chips, cheesy goodness, and flavorful enchilada sauce, this one-pan wonder is perfect for busy nights or when you’re short on time. Easy to prepare and packed with flavor, it’s a crowd-pleaser that everyone will love!

  1. 1 pound ground beef (can be substituted for shredded chicken or ground turkey)
  2. 1 bag tortilla chips (about 12 ounces)
  3. 3 cups shredded cheese
  4. 1 (28-ounce) can of red enchilada sauce
  5. 1 (4-ounce) can of diced green chilies, drained
  6. 1 teaspoon ground cumin
  7. ½ cup salsa

Instructions

  1. Preheat Oven:

    • Preheat the oven to 350°F.
  2. Brown Ground Beef:

    • In a skillet, brown the ground beef over medium heat. Drain the fat once cooked.
  3. Mix Seasonings:

    • Add diced green chilies, salsa, and cumin to the ground beef. Mix well and set aside.
  4. Prepare Tortilla Chips:

    • Pour a bag of tortilla chips into a large mixing bowl and gently break them up into smaller pieces.
  5. Combine Ingredients:

    • Add the beef mixture to the tortilla chips. Pour the entire can of enchilada sauce over the top and add 1 cup of shredded cheese. Gently mix everything together.
  6. Assemble the Dish:

    • Spray a baking dish with non-stick spray. Pour the tortilla chip and beef mixture into the dish.
  7. Add Cheese:

    • Sprinkle the remaining 2 cups of shredded cheese on top (or more, if desired).
  8. Bake:

    • Cover the dish with foil and bake in the preheated oven for 50 minutes.
  9. Serve Hot:
