Description

Keto “Tatertot” Casserole is a low-carb comfort food classic reinvented with crispy roasted cauliflower in place of traditional tatertots, layered with seasoned ground beef, melty cheddar cheese, and a creamy cheese sauce. Perfect for keto and low-carb diets, this casserole delivers cheesy, savory satisfaction with minimal carbs, ideal for cozy dinners or meal prep.

Ingredients

Scale

Main Ingredients

  • 4 cups cauliflower florets (cut into small tatertot-sized pieces)
  • 1 lb ground beef
  • 1 ½ cups shredded sharp cheddar cheese (plus extra for topping)
  • ½ cup heavy cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika (plus extra for tossing cauliflower)
  • Salt and pepper, to taste
  • 2 tbsp olive oil or butter (for sautéing and roasting)

Optional Garnishes

  • 2 green onions, chopped
  • Fresh parsley, chopped

Instructions

  1. Prepare the Cauliflower: Cut fresh cauliflower into small florets resembling mini tatertots. Toss them lightly with olive oil, salt, and paprika. Spread evenly on a baking sheet and roast in a preheated oven at 400°F for about 20 minutes or until golden and crispy.
  2. Cook the Ground Beef Mixture: While the cauliflower roasts, heat butter or olive oil in a skillet over medium heat. Sauté diced onion and minced garlic until fragrant and translucent. Add the ground beef and cook until browned. Stir in Worcestershire sauce, paprika, salt, and pepper. Mix well and cook for another 2 minutes.
  3. Make the Creamy Sauce: In a small saucepan, gently warm the heavy cream over low heat. Add shredded cheddar cheese and stir until the cheese melts completely and the sauce is smooth. Pour the cheese sauce over the cooked ground beef and stir to combine evenly.
  4. Assemble the Casserole: In a baking dish, spread the ground beef and creamy cheese mixture evenly. Top with the roasted cauliflower “tatertots” in a single layer. Sprinkle additional shredded cheddar cheese on top for a golden crust.
  5. Bake Until Bubbling: Bake the assembled casserole in a preheated oven at 375°F for approximately 15 minutes, or until the cheese on top is bubbly and golden. Remove from oven and let it rest for a few minutes to set before serving.

Notes

  • Roast cauliflower well: Ensure florets are dry and spaced apart for maximum crispiness.
  • Use sharp cheddar cheese for bold flavor and best melting results.
  • Let the casserole rest before serving to improve slicing and texture.
  • Customize seasoning with paprika and Worcestershire sauce to your taste.
  • Use fresh ingredients like fresh cauliflower and real heavy cream for best texture and flavor.
