Ingredients
-
2 cups Monterey Jack cheese (shredded)
-
16 ounces ground beef
-
1/2 medium onion (sliced)
-
1 bell pepper (sliced)
-
1 tsp Worcestershire sauce
-
4 ounces cream cheese
-
Salt and pepper to taste
Instructions
-
Preheat the Oven:
Preheat the oven to 350°F (175°C). -
Cook the Beef and Veggies:
In a skillet over medium-high heat, sauté the ground beef, onion, and bell pepper until the vegetables are soft and the beef is browned. Drain any excess grease. -
Add the Cheese and Seasoning:
Stir in Worcestershire sauce, cream cheese, salt, and pepper to taste. Continue cooking until the cream cheese has melted and everything is well combined. -
Bake the Cheese Circles:
On a parchment-lined large baking sheet, place 8 even circles of shredded Monterey Jack cheese. Bake in the preheated oven for 8-10 minutes, until the edges begin to brown and the cheese takes on a lace-like appearance.
-
Assemble the Roll Ups:
Let the cheese cool for a minute or two. While the cheese is still pliable, place a layer of the beef and veggie mixture on each cheese circle. Carefully roll the cheese around the filling and allow the roll ups to cool and harden before serving.
Notes
-
Make sure the cheese circles are spaced far enough apart so they don’t stick together while baking.
-
These roll-ups are perfect as a keto snack or as a part of a low-carb meal.
-
If you want a bit more flavor, you can add a dash of garlic powder or red pepper flakes to the filling.
-
You can store any leftover roll-ups in the refrigerator for a couple of days and reheat them in the oven or microwave.
