Description

This Keto Cottage Cheese Egg Bake is a high-protein, low-carb breakfast casserole that’s perfect for starting your day off right. Packed with eggs, creamy cottage cheese, veggies, and plenty of cheddar, it’s savory, satisfying, and perfect for meal prep!


Ingredients

  1. 12 large eggs
  2. 2 cups (16 ounces) full-fat cottage cheese
  3. 1 cup shredded cheddar cheese
  4. 1 medium red bell pepper, diced
  5. 1 medium green bell pepper, diced
  6. 1 small onion, finely chopped
  7. 2 cups fresh spinach, chopped
  8. 1 teaspoon garlic powder
  9. 1 teaspoon dried oregano
  10. Salt and freshly ground black pepper, to taste
  11. 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or non-stick cooking spray.
  • In a large skillet, heat the olive oil over medium heat. Add the diced red and green bell peppers and chopped onion. Sauté until the vegetables are softened, about 5 minutes. Add the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat and set aside.
  • In a large mixing bowl, whisk together the eggs until well beaten. Add the cottage cheese, shredded cheddar cheese, garlic powder, dried oregano, salt, and black pepper. Mix until thoroughly combined.
  • Fold the sautéed vegetables into the egg mixture. Pour the mixture into the prepared baking dish, spreading it evenly.
  • Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the egg bake is set in the center and lightly golden on top. A toothpick inserted into the center should come out clean.
  • Remove from the oven and allow the egg bake to cool for about 10 minutes before slicing. Serve warm.

Notes

  • This recipe can be made ahead of time and stored in the refrigerator for up to 4 days, making it a great option for meal prep.
  • You can add other veggies such as mushrooms or zucchini to the egg bake for extra flavor.
