Instructions

  1. Prepare the chicken and bacon: Cook chicken breasts thoroughly by either skillet or boiling until fully cooked, then shred the meat using two forks. Cook the bacon strips until crispy and crumble or chop into bite-sized pieces. These cooked proteins form the base of the casserole.
  2. Mix the creamy filling: In a large bowl, combine softened cream cheese, sour cream, ranch seasoning, garlic powder, and shredded cheddar cheese. Stir until smooth and well-blended. Add almond flour here if using, to slightly thicken the mixture while keeping it keto-friendly.
  3. Combine all ingredients: Fold the shredded chicken and crumbled bacon gently into the creamy cheese mixture, ensuring all the protein is evenly coated. Reserve some cheddar cheese and chopped green onions for topping.
  4. Bake to perfection: Transfer the mixed casserole filling into a greased casserole dish, spreading it evenly. Sprinkle the reserved shredded cheddar cheese and chopped green onions on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the casserole is bubbly and golden on top.
