Ingredients
Scale
- For the Salad:
- 1 lb ground beef (80/20)
- 4 cups romaine lettuce, chopped
- 1 cup tomatoes, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely chopped
- 1/2 cup sugar-free Thousand Island or special sauce (recipe below)
For the Special Sauce:
- 1/4 cup mayonnaise
- 1 tbsp sugar-free ketchup
- 1 tbsp dill pickle relish
- 1 tsp white vinegar
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Cook the Beef: In a skillet, cook ground beef over medium heat until browned and fully cooked. Drain excess fat and set aside.
- Make the Sauce: In a bowl, mix together mayonnaise, ketchup, pickle relish, vinegar, paprika, salt, and pepper.
- Assemble Salad: In a large bowl, combine lettuce, tomatoes, shredded cheese, and red onion. Add the cooked ground beef.
- Add Dressing: Pour the special sauce over the salad and toss to coat evenly.
- Serve: Enjoy immediately or refrigerate for a chilled salad.
Notes
- For a creamier texture, add extra mayo or avocado to the salad.
- You can swap ground beef for ground turkey or chicken for a leaner option.
- If you’re not following keto, regular Thousand Island dressing can be used instead of the sugar-free sauce.
