Ingredients

Scale
  1. For the Salad:
    • 1 lb ground beef (80/20)
    • 4 cups romaine lettuce, chopped
    • 1 cup tomatoes, diced
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup red onion, finely chopped
    • 1/2 cup sugar-free Thousand Island or special sauce (recipe below)

    For the Special Sauce:

    • 1/4 cup mayonnaise
    • 1 tbsp sugar-free ketchup
    • 1 tbsp dill pickle relish
    • 1 tsp white vinegar
    • 1/2 tsp paprika
    • Salt and pepper to taste

Instructions

  • Cook the Beef: In a skillet, cook ground beef over medium heat until browned and fully cooked. Drain excess fat and set aside.
  • Make the Sauce: In a bowl, mix together mayonnaise, ketchup, pickle relish, vinegar, paprika, salt, and pepper.
  • Assemble Salad: In a large bowl, combine lettuce, tomatoes, shredded cheese, and red onion. Add the cooked ground beef.
  • Add Dressing: Pour the special sauce over the salad and toss to coat evenly.
  • Serve: Enjoy immediately or refrigerate for a chilled salad.

Notes

  • For a creamier texture, add extra mayo or avocado to the salad.
  • You can swap ground beef for ground turkey or chicken for a leaner option.
  • If you’re not following keto, regular Thousand Island dressing can be used instead of the sugar-free sauce.
