Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 (14.5 oz) cans diced tomatoes (sodium-free, with juices)

1 ¼ cup chicken stock (sodium-free)

¾ cup orzo

2 tablespoons fresh parsley, chopped

2 tablespoons fresh dill, chopped

1 ¼ pounds medium shrimp (peeled and deveined)

¼ teaspoon salt (plus more to taste)

¼ teaspoon freshly ground black pepper (plus more to taste)

⅔ cup feta cheese (crumbled or cubed)
Instructions

Sauté the Aromatics:
Set the Instant Pot to Sauté mode and preheat before adding olive oil. Add onion and garlic, cooking until softened and translucent (about 3 minutes). Deglaze the pot with a splash of water or chicken stock to prevent sticking. -
Add the Base Ingredients:
Stir in the diced tomatoes and chicken stock. Bring to a boil, making sure nothing is stuck to the bottom. -
Cook the Orzo and Shrimp:
Add orzo, parsley, and dill. Stir well. Place shrimp on top and season with salt and pepper. Sprinkle feta cheese over the top. -
Pressure Cook:
Set Instant Pot to Manual High Pressure for 3 minutes. Once done, use Quick Pressure Release to prevent overcooking.

Stir gently before serving and adjust seasoning if needed.

You can substitute the feta cheese with goat cheese for a tangier flavor.
