Description

This Instant Pot Tomato and Shrimp Orzo is a quick and easy one-pot meal packed with bold flavors. Juicy shrimp, tender orzo, and a rich tomato sauce come together with fragrant herbs and creamy feta for a satisfying, protein-rich dish. Perfect for busy weeknights!


Ingredients

  1. 1 tablespoon olive oil

  2. 1 medium onion, diced

  3. 2 cloves garlic, minced

  4. 2 (14.5 oz) cans diced tomatoes (sodium-free, with juices)

  5. 1 ¼ cup chicken stock (sodium-free)

  6. ¾ cup orzo

  7. 2 tablespoons fresh parsley, chopped

  8. 2 tablespoons fresh dill, chopped

  9. 1 ¼ pounds medium shrimp (peeled and deveined)

  10. ¼ teaspoon salt (plus more to taste)

  11. ¼ teaspoon freshly ground black pepper (plus more to taste)

  12. ⅔ cup feta cheese (crumbled or cubed)


Instructions

  • Sauté the Aromatics:
    Set the Instant Pot to Sauté mode and preheat before adding olive oil. Add onion and garlic, cooking until softened and translucent (about 3 minutes). Deglaze the pot with a splash of water or chicken stock to prevent sticking.

  • Add the Base Ingredients:
    Stir in the diced tomatoes and chicken stock. Bring to a boil, making sure nothing is stuck to the bottom.

  • Cook the Orzo and Shrimp:
    Add orzo, parsley, and dill. Stir well. Place shrimp on top and season with salt and pepper. Sprinkle feta cheese over the top.

  • Pressure Cook:
    Set Instant Pot to Manual High Pressure for 3 minutes. Once done, use Quick Pressure Release to prevent overcooking.

 

  • Serve and Enjoy:
    Stir gently before serving and adjust seasoning if needed.


Notes

  • You can substitute the feta cheese with goat cheese for a tangier flavor.

 

  • If you prefer your shrimp more done, you can add an extra minute to the cooking time but be cautious not to overcook.
