  1. 1 lb Italian sausage (removed from casing)
  2. 1 cup beer (lager or ale works best)
  3. 2 cups shredded cheddar cheese
  4. 1 cup shredded mozzarella cheese
  5. 1 cup cream cheese, softened
  6. ½ cup grated Parmesan cheese
  7. ½ cup milk
  8. 2 tablespoons all-purpose flour
  9. 1 tablespoon Dijon mustard
  10. 1 teaspoon garlic powder
  11. ½ teaspoon onion powder
  12. Salt and black pepper, to taste
  13. Tortilla chips or pretzels, for serving

Instructions

  • Cook the Sausage:
    In a large skillet, cook the Italian sausage over medium heat, breaking it up into crumbles as it cooks. Brown the sausage until fully cooked, then drain excess fat and set aside.
  • Heat the Beer and Cream Cheese:
    In a medium saucepan, heat the beer over medium heat. Gradually whisk in the cream cheese until it’s smooth and melted.
  • Melt the Cheeses:
    Add the shredded cheddar, mozzarella, and Parmesan cheeses to the saucepan. Stir constantly until the cheeses are fully melted and the mixture is smooth.
  • Add Remaining Ingredients:
    Stir in the milk, flour, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Continue cooking, stirring occasionally, until the mixture thickens and is heated through.
  • Combine with Sausage:
    Add the cooked sausage to the cheese mixture, stirring until fully combined.
  • Serve:
    Transfer the dip to a serving dish. Serve warm with tortilla chips or pretzels for dipping.

Notes

  • For a milder version, use mild sausage instead of hot sausage.
  • To make a non-alcoholic version, substitute the beer with chicken broth.
