Description

A crisp and refreshing salad combining sweet Honeycrisp apples, crunchy broccoli, and a creamy tangy dressing. Perfect for fall gatherings or as a healthy side dish, this salad is packed with flavor and texture from fresh ingredients and a touch of sweetness.


Ingredients

    1. 4 cups broccoli florets, chopped

    2. 1 large Honeycrisp apple, diced

    3. 1/2 cup dried cranberries

    4. 1/2 cup chopped pecans or walnuts

    5. 1/4 cup red onion, finely diced

    6. 1/2 cup shredded sharp cheddar cheese (optional)

For the dressing:

    1. 1/2 cup mayonnaise

    2. 2 tablespoons apple cider vinegar

    3. 1 tablespoon honey

    4. Salt and pepper to taste


Instructions

  • In a large bowl, combine the chopped broccoli, diced Honeycrisp apple, dried cranberries, chopped pecans, red onion, and shredded cheddar (if using).

  • In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.

  • Pour the dressing over the salad ingredients and toss until everything is well coated.

 

  • Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.


Notes

  • This salad can be made ahead of time and stored in the fridge for a few hours or even overnight for extra flavor.

 

  • You can substitute the pecans or walnuts for another nut of your choice or leave them out for a nut-free version.
