Ingredients
- 4 medium sweet potatoes, peeled and diced into 1-inch cubes
3 tablespoons olive oil
3 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Fresh parsley or thyme, for garnish (optional)
Instructions
Preheat oven to 425°F (220°C).
In a large bowl, toss diced sweet potatoes with olive oil, honey, cinnamon, salt, pepper, and nutmeg (if using) until evenly coated.
Spread sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
Remove from oven, let cool slightly, and garnish with fresh parsley or thyme. Serve warm.
Notes
For a twist, try adding a sprinkle of chili powder for some heat or a dash of vanilla extract for extra depth of flavor.
These sweet potatoes can also be made in advance and reheated in the oven.
