Gravy

  • 3 Tbsp butter
  • 1 Tbsp chicken base (e.g., Better Than Bouillon)
  • 4 Tbsp all-purpose flour
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2 cups chicken stock
  • ½ cup water
  • ¼ cup heavy cream (optional)

Instructions

  1. Prepare the chicken: Season chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 4–5 minutes per side. Remove chicken from skillet and set aside.
  2. Make the gravy base: In the same skillet, melt butter over medium heat. Stir in flour, onion powder, and garlic powder to create a roux. Cook, stirring constantly, until the mixture is lightly browned and fragrant, about 2 minutes.
  3. Add liquids: Gradually whisk in chicken stock and water, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer and cook until the gravy thickens, about 3–5 minutes.
  4. Finish the gravy: Stir in chicken base until fully dissolved. If desired, add heavy cream for a richer, silkier texture. Taste and adjust seasoning with salt and pepper.
  5. Serve: Return the cooked chicken to the skillet, spoon the gravy over the top to coat, and heat through for a couple of minutes. Serve warm with your favorite sides!
