Gorgonzola Cheese Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 2 ounces shredded mozzarella
- 2 ounces crumbled gorgonzola, plus extra for topping
- Salt and pepper, to taste
- Thinly sliced chives, for garnish

Potato Chips
- Using a mandoline or sharp knife, thinly slice the potatoes. Rinse under cold water, then pat dry thoroughly with paper towels.
- Heat oil in a deep pan or fryer to 350°F (175°C). Fry the potato slices in batches until golden and crisp. Drain on paper towels and sprinkle with sea salt.
Gorgonzola Cheese Sauce
- Melt butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk, cooking until the mixture thickens.
- Stir in the mozzarella and gorgonzola until melted and smooth. Season with salt and pepper.
- Serve the chips warm, drizzled with cheese sauce and topped with extra gorgonzola and chives.
