  2. 2 egg yolks
  3. 3 tbsp cold water
  4. 1 tsp salt
  5. 2 cups flour

Instructions

  • Beat the eggs until light and fluffy.
  • Add the cold water, salt, and flour. Mix until well combined, then knead the dough until smooth.
  • Roll out the dough on a floured surface to about 1/8″ thickness.
  • Cut the dough into strips (a pizza cutter works well).
  • Store the noodles in the fridge for 2-3 days or freeze for 1-2 months.
  • To cook, boil the noodles in water for 7-9 minutes.
  • Serve as a side dish or in a delicious chicken soup!
