Description

  • ½ cup milk (plus extra for brushing)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder (if using).
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the cottage cheese, chopped herbs, and milk. Mix just until the dough comes together, being careful not to overmix.
  5. Turn the dough onto a lightly floured surface and gently knead a few times. Pat or roll the dough to about ¾-inch thickness and cut out biscuits using a biscuit cutter or the rim of a glass.
  6. Arrange the biscuits on the prepared baking sheet, leaving about 1 inch between each. Brush the tops lightly with milk for a golden finish.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown and the biscuits are cooked through.
