Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder (if using).
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the cottage cheese, chopped herbs, and milk. Mix just until the dough comes together, being careful not to overmix.
- Turn the dough onto a lightly floured surface and gently knead a few times. Pat or roll the dough to about ¾-inch thickness and cut out biscuits using a biscuit cutter or the rim of a glass.
- Arrange the biscuits on the prepared baking sheet, leaving about 1 inch between each. Brush the tops lightly with milk for a golden finish.
- Bake for 12 to 15 minutes, or until the tops are golden brown and the biscuits are cooked through.
- Remove from the oven and allow the biscuits to cool slightly before serving. Serve warm with butter, honey, or your favorite spread.
