  1. 4 boneless, skinless chicken breasts
  2. Salt and pepper to taste
  3. 2 tablespoons olive oil
  4. 1 tablespoon unsalted butter
  5. 1 small onion, finely chopped
  6. 3 garlic cloves, minced
  7. 1 cup heavy cream
  8. 1/4 cup Dijon mustard
  9. 1/2 cup Asiago cheese, grated
  10. 1 teaspoon dried thyme
  11. 1 teaspoon dried parsley
  12. Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken
    Season the chicken breasts with salt and pepper on both sides.
    In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  • Make the Sauce
    In the same skillet, reduce the heat to medium and add the butter. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes.
    Stir in the minced garlic and cook for an additional minute until fragrant.
    Pour in the heavy cream and bring to a gentle simmer. Whisk in the Dijon mustard, followed by the grated Asiago cheese. Stir until the cheese is melted and the sauce is smooth.

 

  • Finish the Dish
    Add the dried thyme and parsley to the sauce, mixing well.
    Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
    Garnish with fresh chopped parsley before serving.

Notes

  • You can substitute the Asiago cheese with Parmesan if desired.
  • This dish pairs well with mashed potatoes, rice, or steamed vegetables.

 

  • For a lighter version, use half-and-half or skim milk instead of heavy cream.
