  1. ½ pound ground beef

  2. 1 tablespoon olive oil

  3. 1 large yellow onion, finely chopped

  4. 1 stalk celery, finely chopped

  5. 2 medium carrots, diced

  6. 3 cloves garlic, chopped

  7. 1 (14.5-ounce) can diced tomatoes

  8. 6 cups chicken broth (or beef broth for a richer flavor)

  9. 1 cup French lentils (lentilles du Puy) or common brown or green lentils

  10. ½ teaspoon dried thyme

  11. 2 bay leaves

  12. 1 teaspoon salt

  13. ¼ teaspoon ground black pepper

  14. A few tablespoons chopped fresh parsley, for garnish (optional)

Instructions

  • Heat a large pot over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5 minutes. Drain any excess fat if needed.

  • Add olive oil, onions, celery, carrots, and garlic. Cook, stirring occasionally, until the onions are soft and translucent, about 5 minutes. Do not brown; reduce heat if necessary.

  • Stir in the diced tomatoes (with their juices), broth, lentils, thyme, bay leaves, salt, and black pepper. Bring to a boil.

  • Cover partially, reduce the heat to low, and simmer until the lentils are tender, 45 to 50 minutes (see note below if using common brown or green lentils).

  • Remove the bay leaves and discard them.

  • Use an immersion blender to purée the soup slightly, leaving some texture for a hearty consistency. If you don’t have an immersion blender, blend about 2 cups of the soup in a blender and return it to the pot.

 

  • Garnish with fresh chopped parsley if desired and serve hot.

Notes

If using common brown or green lentils, you may need to increase the cooking time slightly, as these lentils take longer to soften.
