Description

This Lemon Butter Baked Cod is light, flaky, and packed with fresh citrusy flavor! It’s healthy, easy to make, and perfect for a quick weeknight meal. The fish stays moist and tender while soaking up the garlic-lemon butter goodness.


Ingredients

  1. For the Cod:

    1. 4 cod fillets (6 oz each)
    2. 2 tbsp olive oil
    3. 2 tbsp unsalted butter, melted
    4. 3 cloves garlic, minced
    5. 2 tbsp fresh lemon juice
    6. 1 tsp lemon zest
    7. ½ tsp salt
    8. ½ tsp black pepper
    9. ½ tsp paprika (for color)
    10. ½ tsp dried oregano (or thyme)
    11. ¼ tsp red pepper flakes (optional, for a kick)
    12. 1 tbsp fresh parsley, chopped
    13. 1 lemon, thinly sliced (for garnish)

Instructions

  • Prep the Oven & Pan
    Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  • Make the Lemon Butter Mixture
    In a small bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, salt, pepper, paprika, oregano, and red pepper flakes.
  • Season & Bake the Cod
    Pat the cod fillets dry with paper towels and place them in the prepared baking dish.
    Pour the lemon butter mixture evenly over the fish.
    Arrange lemon slices on top of the fillets.
    Bake for 12-15 minutes, or until the fish flakes easily with a fork.
  • Serve & Enjoy!
    Garnish with fresh parsley and serve with steamed veggies, quinoa, or a light salad.

Notes

  • You can use thyme instead of oregano for a different flavor profile.
  • The cod should be cooked until it flakes easily, but be careful not to overcook it.
