Dry Ingredients:

  • 1 ½ cups gluten-free protein oats
  • 1/3 cup vanilla protein powder
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt

Wet Ingredients:

  • 1 cup unsweetened almond milk
  • 1 large egg
  • 2 tablespoons maple syrup or raw honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peanut butter (optional)

Add-ins:

  • 1 cup fresh or frozen mixed berries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease well.
  2. In a large bowl, whisk together oats, protein powder, cinnamon, baking powder, and sea salt.
  3. In another bowl, whisk almond milk, egg, maple syrup or honey, vanilla extract, and peanut butter (if using).
  4. Pour the wet mixture into the dry ingredients and stir just until combined.
  5. Gently fold in the mixed berries.
  6. Spoon the batter evenly into muffin cups, filling each about ¾ full.
  7. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use frozen berries straight from the freezer—no need to thaw.
  • To make dairy-free, ensure your protein powder is plant-based.
  • Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
