4 boneless, skinless chicken breasts
1 cup BBQ sauce
1 can (or fresh) pineapple chunks
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium red onion, sliced
Salt and pepper to taste
Fresh cilantro, for garnish (optional)
Aluminum foil
Preheat your grill to medium-high heat.
Cut 4 large pieces of aluminum foil and lay them flat on a clean surface.
Place one chicken breast in the center of each foil piece.
Pour 1/4 cup of BBQ sauce over each chicken breast, ensuring it’s well coated.
Add an equal amount of pineapple chunks, sliced bell peppers, and red onion on top of each chicken breast.
Season with salt and pepper to taste.
Fold the foil over the chicken and vegetables, crimping the edges to seal tightly.
Place the foil packets on the grill and cook for about 25-30 minutes, or until the chicken is cooked through and no longer pink.
Carefully open the packets (watch out for steam!) and garnish with fresh cilantro if desired.
Serve warm with your choice of sides.
You can add other vegetables, like zucchini or mushrooms, to personalize this dish.
To make it a full meal, serve with rice or a simple salad.
If you’re using fresh pineapple, ensure to cut it into small, bite-sized pieces for easy grilling.
