  1. 4 boneless, skinless chicken breasts

  2. 1 cup BBQ sauce

  3. 1 can (or fresh) pineapple chunks

  4. 1 red bell pepper, sliced

  5. 1 yellow bell pepper, sliced

  6. 1 medium red onion, sliced

  7. Salt and pepper to taste

  8. Fresh cilantro, for garnish (optional)

  9. Aluminum foil

Instructions

  • Preheat your grill to medium-high heat.

  • Cut 4 large pieces of aluminum foil and lay them flat on a clean surface.

  • Place one chicken breast in the center of each foil piece.

  • Pour 1/4 cup of BBQ sauce over each chicken breast, ensuring it’s well coated.

  • Add an equal amount of pineapple chunks, sliced bell peppers, and red onion on top of each chicken breast.

  • Season with salt and pepper to taste.

  • Fold the foil over the chicken and vegetables, crimping the edges to seal tightly.

  • Place the foil packets on the grill and cook for about 25-30 minutes, or until the chicken is cooked through and no longer pink.

  • Carefully open the packets (watch out for steam!) and garnish with fresh cilantro if desired.

 

  • Serve warm with your choice of sides.
