- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (14.5 ounce) can diced tomatoes
- 1 (14.5 ounce) can tomato sauce
- 1 (10 ounce) can tomato soup
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1/2 cup chopped fresh parsley
- 1 cup small pasta (e.g., ditalini or acini di pepe)
Instructions
- Brown ground beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Sauté vegetables: Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Add garlic: Add garlic and cook for 1 minute more.
- Combine ingredients: Add crushed tomatoes, diced tomatoes, tomato sauce, tomato soup, oregano, basil, and black pepper to the pot. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
- Cook pasta: Add pasta to the pot and cook until tender, about 8-10 minutes.
- Stir in parsley: Stir in chopped parsley.
- Serve: Serve hot with a sprinkle of Parmesan cheese, if desired.
Notes
- For a richer flavor, consider using beef broth or vegetable broth instead of some of the tomato products.
- Add extra vegetables like zucchini, mushrooms, or spinach for more variety.
- Top with sour cream or Greek yogurt for added creaminess.
- Add red pepper flakes if you prefer a bit of heat in your soup.
- You can switch up the pasta shape (macaroni, rotini, or shells) depending on what you have on hand.
