Ingredients

Scale
  1. 1 tablespoon olive oil
  2. 1 pound ground beef
  3. 1 onion, chopped
  4. 2 carrots, chopped
  5. 2 celery stalks, chopped
  6. 4 cloves garlic, minced
  7. 1 (28 ounce) can crushed tomatoes
  8. 1 (14.5 ounce) can diced tomatoes
  9. 1 (14.5 ounce) can tomato sauce
  10. 1 (10 ounce) can tomato soup
  11. 1 teaspoon dried oregano
  12. 1/2 teaspoon dried basil
  13. 1/4 teaspoon black pepper
  14. 1/2 cup chopped fresh parsley
  15. 1 cup small pasta (e.g., ditalini or acini di pepe)

Instructions

  • Brown ground beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Sauté vegetables: Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  • Add garlic: Add garlic and cook for 1 minute more.
  • Combine ingredients: Add crushed tomatoes, diced tomatoes, tomato sauce, tomato soup, oregano, basil, and black pepper to the pot. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
  • Cook pasta: Add pasta to the pot and cook until tender, about 8-10 minutes.
  • Stir in parsley: Stir in chopped parsley.
  • Serve: Serve hot with a sprinkle of Parmesan cheese, if desired.

Notes

  • For a richer flavor, consider using beef broth or vegetable broth instead of some of the tomato products.
  • Add extra vegetables like zucchini, mushrooms, or spinach for more variety.
  • Top with sour cream or Greek yogurt for added creaminess.
  • Add red pepper flakes if you prefer a bit of heat in your soup.
  • You can switch up the pasta shape (macaroni, rotini, or shells) depending on what you have on hand.
