Description

This delicious Ground Beef Zucchini Sweet Potato Skillet is a one-pan meal that’s packed with savory flavors. Perfectly cooked ground beef, tender sweet potatoes, and zucchini come together with a blend of spices and fresh lemon juice for a quick, healthy, and filling dinner.


Ingredients

  1. 1 lb ground beef (or ground turkey)
  2. 1 small onion, diced
  3. 3 cloves garlic, minced
  4. 1 large sweet potato, peeled & diced
  5. 1 medium zucchini, diced
  6. 2 tbsp olive oil
  7. For Seasoning:
    1. 1 tsp salt
    2. ½ tsp black pepper
    3. ½ tsp smoked paprika
    4. ½ tsp dried oregano
    5. 1 tbsp tomato paste
    6. 1 tbsp fresh lemon juice
    7. 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Sauté the Beef & Onions:
    Heat 1 tbsp olive oil in a large skillet over medium heat. Add the ground beef, breaking it up as it cooks. Stir in the onion and garlic, cooking until the beef is browned (about 5-7 minutes). Drain excess fat if needed.

  • Cook the Sweet Potatoes:
    Add the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Stir well, cover the skillet, and cook for 8-10 minutes until softened, stirring occasionally.

  • Add Zucchini & Tomato Paste:
    Stir in zucchini and tomato paste, mixing well to coat everything in flavor. Cook for another 5 minutes, until zucchini is tender but not mushy.

  • Serve:
    Remove from heat and garnish with fresh parsley before serving.


Notes

  • For a lighter version, you can swap the ground beef for ground turkey or chicken.
  • You can add a squeeze of fresh lemon juice for extra brightness before serving.
  • Add a dollop of Greek yogurt or a sprinkle of cheese for extra creaminess (optional).
