This delicious Ground Beef Zucchini Sweet Potato Skillet is a one-pan meal that’s packed with savory flavors. Perfectly cooked ground beef, tender sweet potatoes, and zucchini come together with a blend of spices and fresh lemon juice for a quick, healthy, and filling dinner.
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 large sweet potato, peeled & diced
- 1 medium zucchini, diced
- 2 tbsp olive oil
- For Seasoning:
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp dried oregano
- 1 tbsp tomato paste
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions

Sauté the Beef & Onions:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add the ground beef, breaking it up as it cooks. Stir in the onion and garlic, cooking until the beef is browned (about 5-7 minutes). Drain excess fat if needed. -
Cook the Sweet Potatoes:
Add the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Stir well, cover the skillet, and cook for 8-10 minutes until softened, stirring occasionally. -
Add Zucchini & Tomato Paste:
Stir in zucchini and tomato paste, mixing well to coat everything in flavor. Cook for another 5 minutes, until zucchini is tender but not mushy. -
Serve:
Remove from heat and garnish with fresh parsley before serving.
Notes
- For a lighter version, you can swap the ground beef for ground turkey or chicken.
- You can add a squeeze of fresh lemon juice for extra brightness before serving.
- Add a dollop of Greek yogurt or a sprinkle of cheese for extra creaminess (optional).
