Description

These Grilled Surf & Turf Skewers with Chimichurri are a perfect balance of juicy steak, tender shrimp, and smoky veggies. Paired with a flavorful chimichurri sauce, this dish makes for an unforgettable BBQ meal. Perfect for summer grilling!


Ingredients

  1. For the Skewers:

    • 1 lb sirloin or ribeye steak, cubed
    • 1 lb shrimp, peeled and deveined
    • 1 bell pepper, chopped
    • 1 red onion, chopped
    • 2 tbsp olive oil
    • Salt & pepper to taste
    • Wood or metal skewers

    For the Chimichurri Sauce:

    1. 1 cup fresh parsley, chopped
    2. 1/4 cup olive oil
    3. 2 tbsp red wine vinegar
    4. 2 garlic cloves, minced
    5. 1 tsp red pepper flakes
    6. Salt & pepper to taste

Instructions

  • Preheat Grill: Heat your grill to medium-high heat.
  • Season & Assemble: Toss beef cubes with olive oil, salt, and pepper. Thread beef, shrimp, bell pepper, and onion onto skewers, alternating the ingredients.
  • Grill: Cook skewers for 8-10 minutes, turning occasionally, until beef reaches desired doneness and shrimp are opaque.
  • Make Chimichurri: In a bowl, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper.

 

  • Serve: Drizzle chimichurri over hot skewers and serve immediately.

Notes

  • Feel free to customize the veggies by adding zucchini or mushrooms for extra flavor.
