Description

This refreshing Grilled Chicken Avocado Salad is packed with fresh ingredients like creamy avocado, juicy tomatoes, and grilled chicken, all drizzled with a tangy lime dressing. Perfect for a light lunch or dinner

  1. For the Chicken:

    • 2 chicken breasts
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • ½ teaspoon paprika
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon lemon juice

    For the Salad:

    • 1 large avocado, diced
    • 1 cup cherry tomatoes, halved
    • ¼ cup fresh cilantro, chopped
    • 1 cup lettuce or mixed greens (optional)

    For the Dressing:

    1. 2 tablespoons olive oil
    2. 1 tablespoon fresh lime juice
    3. 1 teaspoon honey
    4. ½ teaspoon Dijon mustard
    5. Salt & pepper to taste

Instructions

  • Marinate & Grill the Chicken:

    • Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
    • Grill or pan-cook for 6-7 minutes per side until golden brown and cooked through.
    • Let the chicken rest for 5 minutes, then slice it.
  • Prepare the Salad:

    • In a bowl, combine the diced avocado, halved cherry tomatoes, and chopped cilantro.
    • Add lettuce or mixed greens if desired.
  • Make the Dressing:

    • In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined.

 

  • Assemble & Serve:

    • Add the sliced chicken on top of the salad.
    • Drizzle with the lime dressing and toss gently to combine. Serve immediately and enjoy!

Notes

  • You can use any mixed greens you prefer or omit them for a lower-carb option.

 

  • For extra crunch, add some toasted nuts or seeds as a garnish.
