This classic Green Bean Casserole is creamy, flavorful, and topped with crispy fried onions for the perfect holiday or weeknight side dish. A delicious blend of tender green beans, savory shallots, and a rich sauce that will be a hit at your next meal!

Ingredients

Scale
  1. 1 ½ pounds fresh green beans, trimmed (cut into smaller pieces if desired)
  2. 2 tablespoons salted butter
  3. 2 small shallots, thinly sliced
  4. ½ teaspoon dried thyme
  5. ½ teaspoon kosher salt
  6. ½ teaspoon black pepper
  7. 2 tablespoons all-purpose flour
  8. 1 cup chicken stock
  9. 1 cup heavy cream
  10. 6-ounce container crispy fried onions

Instructions

  • Preheat the Oven: Preheat the oven to 375°F (190°C). Spray an 11×7-inch baking dish with cooking spray and set aside.
  • Blanch the Green Beans: Bring a large pot of water to a boil. Add the green beans and cook for 5 minutes.
  • Cool the Green Beans: Drain the green beans and immediately place them into a large bowl of ice water to stop the cooking process. Drain the beans again and place them on a paper towel-lined sheet tray while you prepare the sauce.
  • Prepare the Sauce: In a large skillet over medium heat, melt the butter. Add the shallots and cook until softened, about 5 minutes. Add the thyme, salt, and pepper, and stir to combine.
  • Make the Gravy: Add the flour and whisk to combine. Cook for 1 minute. Slowly stream in the chicken stock while whisking constantly to avoid lumps, then do the same with the heavy cream.
  • Simmer the Sauce: Bring the mixture to a simmer and cook for 8-10 minutes until thickened to a gravy consistency, whisking occasionally.
  • Combine with Green Beans: Add the drained green beans to the sauce and toss to coat.
  • Bake the Casserole: Transfer the green bean mixture to the prepared baking dish. Top with the crispy fried onions. Bake uncovered for 15-20 minutes, or until bubbly around the edges and the onions are browned.

  • Serve: Serve immediately and enjoy!

Notes

  • Make sure to use fresh green beans for the best texture.
  • For a lighter version, you can substitute the heavy cream with a lighter cream or milk.
  • If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.

  • You can use homemade crispy fried onions if you prefer.
