Description

Greek Chicken Bites are juicy, flavorful pieces of chicken marinated in a zesty lemon and oregano mixture, then pan-seared to perfection. A quick and tasty dish perfect for any meal.


Ingredients

  • 1 lb chicken breasts, cut into 1″ pieces (about 2 breasts)
  • 2 tbsp extra-virgin olive oil
  • Juice and zest of 1 lemon (about 2 tbsp juice, 1 tsp zest)
  • 2 cloves garlic, minced (about 1 tsp)
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ cup white wine, chicken broth, or water


Instructions

  1. In a bowl, combine olive oil, lemon juice and zest, garlic, oregano, salt, and pepper.
  2. Add chicken pieces and marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6–8 minutes.
  4. Pour in white wine (or broth/water), simmer for 2–3 minutes until liquid reduces slightly.
  5. Serve warm.

  • Marinating the chicken longer enhances flavor and tenderness.
  • Use chicken broth instead of wine for a non-alcoholic option.
  • Serve with pita bread, salad, or rice for a full meal.
