Dough

  • 4 cups all-purpose flour
  • 1 packet (2¼ teaspoons) instant yeast
  • 1 teaspoon salt
  • ¾ cup warm milk
  • 3 tablespoons honey
  • 6 tablespoons salted butter, at room temperature
  • 3 eggs, at room temperature
  • 1 egg yolk, beaten with 1 tablespoon water (for brushing)
  • Flaky sea salt, for topping

Sage Honey Butter

  • 12 fresh sage leaves
  • 6 tablespoons salted butter, at room temperature
  • 3 tablespoons honey

Instructions

  1. In the bowl of a stand mixer fitted with the dough hook, combine 3½ cups flour, yeast, and salt.
  2. Add the warm milk, honey, butter, and eggs. Mix on low until a sticky dough forms. Add more flour if needed, 1 tablespoon at a time, until the dough pulls away from the bowl.
  3. Knead the dough on medium speed for 5–7 minutes until smooth, elastic, and slightly tacky.
  4. Transfer the dough to a lightly greased bowl. Cover and let rise in a warm place until doubled in size, about 1–2 hours.
  5. Punch down the dough and divide it into 12 equal portions. Roll each into a smooth ball.
  6. Place the rolls into a greased 9×13-inch baking dish. Cover and let rise for another 30–45 minutes until puffy.
  7. Preheat oven to 375°F (190°C). Brush the tops with egg yolk wash and sprinkle with flaky sea salt.
  8. Bake for 18–22 minutes until the rolls are golden and fully baked.
  9. Meanwhile, in a small saucepan, melt the butter for the sage honey butter. Add sage leaves and cook until the leaves are crisp and the butter is lightly browned, 2–3 minutes. Remove from heat and stir in honey.
  10. Brush the warm rolls generously with the sage honey butter and serve immediately.

  • Room temperature eggs help the dough rise better and mix more evenly.
  • You can shape the rolls ahead of time and refrigerate overnight. Let come to room temp before baking.
