Description

These Honey Peach Cream Cheese Cupcakes are bursting with sweet summer flavors! Moist honey-sweetened cupcakes packed with juicy peaches, topped with a luscious cream cheese frosting and finished with a drizzle of honey. Perfect for any celebration or summer party


Ingredients

For the Cupcakes:
1½ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
½ cup honey
¼ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup buttermilk
1 cup diced fresh peaches (or canned, drained and chopped)

For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar, sifted
1 tsp vanilla extract
1 tbsp honey (optional)

For Garnish:
Thin peach slices or diced peaches
Drizzle of honey


Instructions

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, beat butter, honey, and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
Fold in diced peaches gently.
Divide batter evenly among liners, filling each about ⅔ full.
Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Let cool in pan 5 minutes, then transfer to a wire rack.
For frosting, beat cream cheese and butter until smooth.
Gradually add powdered sugar and beat until fluffy. Mix in vanilla and honey if using.
Frost cooled cupcakes and garnish with peach slices and a honey drizzle.


Notes

Fresh ripe peaches offer the best flavor, but canned or frozen (thawed and drained) peaches work well too. For extra peach flavor, add a tablespoon of peach jam to the frosting. Store cupcakes in the refrigerator for up to 3 days.
