A flavorful twist on the classic Philly cheese sandwich, these Croissant Chicken Philly Cheese Sandwiches feature marinated baked chicken, sautéed vegetables, and a creamy cheddar dill cheese sauce all served on toasted croissants.

- For the Marinade:
- 3 tablespoons extra virgin olive oil or Italian salad dressing
- 2 heaping tablespoons Orrington Farms Chicken Base
- 1 tablespoon Italian seasoning
- 1 tablespoon granulated garlic or garlic powder
- For the Sandwiches:
- 2 boneless, skinless chicken breasts
- Sautéed onions, green peppers, and mushrooms
- Toasted croissants
- Pan drippings from roasted chicken
- For the Cheese Sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup shredded mild cheddar cheese
- 2 tablespoons fresh chopped dill
Instructions
- Preheat oven to 350°F.
- Place chicken breasts in a sealable bag with olive oil, chicken base, Italian seasoning, and garlic. Seal and massage to coat. Refrigerate for 15 minutes.
- Transfer chicken to a lined and oiled baking sheet. Bake for 30 minutes or until internal temperature reaches 165°F.
- Remove from oven, shred the chicken, and drizzle with any pan drippings.
- Sauté sliced onions, peppers, and mushrooms until tender.
- To make the cheese sauce, melt butter in a skillet over medium-high heat. Stir in flour and whisk into a smooth roux.
- Slowly whisk in milk until smooth, then reduce heat to low.
- Add shredded cheese and whisk until melted. Stir in chopped dill and keep warm.
- Assemble sandwiches by layering shredded chicken onto toasted croissants, topping with sautéed vegetables, and spooning on the warm cheese sauce. Place the top half of the croissant over the filling.
Notes
- You can substitute the chicken base with bouillon or broth concentrate if needed.
- Use store-bought sautéed vegetables to save time.
- Fresh dill adds a unique twist to the cheese sauce, but it can be omitted or replaced with parsley.
- The sandwich can be served open-faced for a lighter option.
