Description

Homemade calzones with a golden crust, stuffed with a cheesy, savory filling of mozzarella, ricotta, pepperoni, and basil—perfect for lunch, dinner, or a hearty snack.

  • Dough:
  • 1 (.25-ounce) package active dry yeast
  • 1 teaspoon white sugar
  • 1 cup warm water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon olive oil (for coating bowl)
  • 1 large egg, beaten (for brushing)
  • Filling:
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup ricotta cheese
  • ½ cup pepperoni slices, diced
  • 1 tablespoon dried basil

Instructions

  1. In a medium bowl, proof the yeast by mixing yeast and sugar with warm water. Let sit for 8-10 minutes until foamy.
  2. Add olive oil and salt to the mixture, then mix in flour 1 cup at a time until a smooth dough forms.
  3. Turn dough out onto a lightly floured surface and knead for about 5 minutes until elastic.
  4. Place dough in a bowl greased with olive oil, flipping to coat. Cover and let rise for 45 minutes or until doubled in size.
  5. While dough rises, combine mozzarella, ricotta, pepperoni, and basil in a bowl. Refrigerate until needed.
  6. Preheat oven to 375°F and grease a baking sheet.
  7. Once risen, punch down the dough and divide into 2 equal pieces. Then divide each into 3–4 balls.
  8. Roll each ball into an ⅛-inch thick circle on a lightly floured surface.
  9. Place about ¼ of the filling onto each dough circle. Fold over to form a semi-circle and press edges with a fork to seal.
  10. Brush tops with beaten egg and place on the prepared baking sheet. Cut a small “v” shape slit on each for venting.
  11. Bake for 24–28 minutes, or until golden brown. Serve warm.

Notes

  • You can customize the filling with sautéed vegetables, sausage, or other cheeses.
  • Ensure a tight seal on the edges to prevent filling from leaking during baking.
  • Brush with extra egg for a glossier finish.
  • Calzones can be frozen before baking for later use.
