For the Puff Pastry:
1 sheet puff pastry (thawed)
1 egg (for egg wash)
1 tbsp water
1 tbsp granulated sugar (for sprinkling)
For the Caramel Apple Filling:
2 cups diced apples (Granny Smith or Honeycrisp)
1/4 cup brown sugar
1 tbsp granulated sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp unsalted butter
1 tsp vanilla extract
1 tbsp cornstarch mixed with 1 tbsp water (slurry)
1/4 cup caramel sauce
Prepare the Apple Filling:
In a saucepan over medium heat, melt butter. Add diced apples, brown sugar, granulated sugar, cinnamon, and nutmeg.
Cook for 5-7 minutes until apples are soft and caramelized.
Stir in vanilla extract and cornstarch slurry, then cook for 1-2 more minutes until thickened.
Remove from heat and let the filling cool slightly.
Prepare the Puff Pastry:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the puff pastry and cut it into rectangles or squares.
Lightly score a border around each piece (do not cut through).
Mix the egg and water to create an egg wash and brush it along the edges of the pastry.
Sprinkle a little granulated sugar on the edges for extra crispness.
Assemble & Bake:
Spoon the caramel apple filling into the center of each pastry, staying within the scored border.
