- 1/4 cup chopped fresh parsley leaves
- 5 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp melted butter
- 5 garlic cloves, minced
- 1/3 cup all-purpose flour
- 1 tsp ground coriander
- 3/4 tsp sweet Spanish paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together the flour, ground coriander, paprika, cumin, salt, and black pepper.
- Dredge the cod fillet pieces in the flour mixture, ensuring they are evenly coated.
- Arrange the coated cod pieces on a greased baking sheet.
- In a separate bowl, whisk together the lemon juice, olive oil, melted butter, and minced garlic to make the lemon sauce.
- Pour the lemon sauce over the cod fillets.
- Bake for 12–15 minutes, or until the cod is opaque and flakes easily with a fork.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
- Make sure the cod is fully cooked and flakes easily with a fork to ensure it is tender.
- Feel free to add extra lemon juice or garlic to the sauce if you like more tang or flavor.
- This recipe works well with other white fish like haddock or tilapia as a substitute for cod.
- Serve with a side of roasted vegetables or rice for a complete meal.
