Description

This Baked Chicken with Crispy Feta & Vinaigrette is a vibrant, flavor-packed dish featuring juicy spiced chicken tenders, roasted peppers, golden crispy feta, and a zesty homemade vinaigrette—perfect served over rice or enjoyed on its own.


Ingredients

  • ½ pound boneless skinless chicken tenders
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin seed
  • ½ teaspoon ground ginger
  • Kosher salt and black pepper to taste
  • Chili flakes to taste
  • 2 bell peppers, sliced (red, orange, or yellow)
  • ½1 Fresno pepper, seeded and sliced
  • 1 shallot, sliced
  • 2 cloves garlic, chopped
  • 4 ounces feta cheese block, patted dry
  • 2 tablespoons cornstarch
  • ⅓ cup mixed fresh herbs (cilantro, parsley, dill)
  • Optional: rice for serving
  • For the Vinaigrette:
  • ⅙ cup (about 2.5 tablespoons) extra virgin olive oil
  • 1 tablespoon lemon juice
  • ½ tablespoon champagne vinegar
  • 1 teaspoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken tenders with olive oil, paprika, cumin, ground ginger, salt, pepper, and chili flakes.
  3. In a baking dish, arrange the seasoned chicken tenders, then scatter the bell peppers, Fresno pepper, shallot, and garlic around the chicken.
  4. Pat the feta cheese dry, then slice it into small pieces. Toss feta with cornstarch until lightly coated.
  5. Sprinkle the cornstarch-coated feta over the chicken and vegetables.
  6. Bake for 20–25 minutes, or until the chicken is cooked through and the feta is crispy and golden.
  7. While the chicken bakes, whisk together the vinaigrette ingredients (olive oil, lemon juice, champagne vinegar, and honey).
  8. Once the chicken is done, drizzle with the vinaigrette and sprinkle with fresh herbs.
  9. Serve with rice, if desired.
