These Turkey and Cranberry Sausage Rolls are a festive twist on a classic snack, combining juicy seasoned turkey mince with sweet cranberry sauce, all wrapped in golden, flaky puff pastry. Perfect for holiday gatherings or cozy nights in.

- 500g turkey mince
- ½ tsp garlic powder
- 375g ready-rolled puff pastry
- 130g cranberry sauce
- 1 tbsp milk
- Spray oil
- 1 tbsp fresh thyme leaves
- 1 tsp sea salt
- ¼ tsp black pepper
Instructions
- Preheat oven to 200°C (400°F).
- In a bowl, mix turkey mince, garlic powder, thyme, sea salt, and black pepper until combined.
- Roll out the puff pastry and cut into rectangles.
- Spread cranberry sauce down the center of each pastry piece.
- Place turkey mixture on top of cranberry sauce and shape into a log.
- Roll the pastry over the filling and seal the edges using a little milk.
- Brush the tops with milk and spray lightly with oil.
- Bake for 25–30 minutes until golden and cooked through.
- Let cool slightly before serving.
Notes
- You can use store-bought or homemade cranberry sauce.
- Try adding a bit of grated cheese to the filling for extra flavor.
- These rolls can be prepped in advance and baked when ready to serve.
- Best served warm but can be enjoyed cold as well.
