Description

Ingredients

  • 2 tbsp vanilla Greek yogurt
  • 1 ½2 cups powdered sugar (adjust for desired consistency)
  • 1 tsp lemon extract
  • Fruit of choice (e.g., blueberries, blackberries, raspberries, kiwi)

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine softened butter, sugar, egg white, and lemon extract. Beat with a hand mixer until combined.
  3. Add almond flour and mix for another 10-15 seconds until the dough is crumbly but sticks together when pressed.
  4. Grease or line an 11×7 baking sheet with parchment paper. Press the dough evenly into the pan to cover the bottom.
  5. Bake for 15-18 minutes, or until the crust is golden brown. Watch the crust after 12 minutes to avoid burning.
  6. While the crust is baking, prepare the frosting: In a mixing bowl, combine butter, powdered sugar, lemon extract, and cream cheese. Mix on medium-high until you reach a frosting-like consistency.
  7. Wash and dry the fruit completely to avoid excess water on the crust or frosting.
  8. Once the crust has cooled (you can speed this up by refrigerating or freezing), spread an even layer of frosting over the entire crust.
