- 2 tablespoons unsalted butter, melted
- Chopped cilantro (for garnish)

Instructions
- Preheat your oven to 350°F (175°C). Arrange baby carrots on a rimmed 9×13-inch baking sheet.
- In a bowl, whisk together honey, thyme, rosemary, garlic powder, black pepper, salt, and melted butter.
- Drizzle the honey mixture over the carrots and toss to coat evenly.
- Roast in the oven for 20–35 minutes, stirring every 5–10 minutes until tender and caramelized.
- Garnish with chopped cilantro and crumbled goat cheese. Serve immediately.
