A healthy and delicious bowl of glazed chicken, roasted broccoli, and fresh cucumber served over white rice, topped with creamy mashed avocado. Perfect for a quick and satisfying meal!

  1. For the Chicken:

    • 2 chicken breasts (diced)
    • 2 garlic cloves (minced)
    • 1 tsp paprika
    • 1 tbsp honey
    • 2 tbsp soy sauce
    • 1 tbsp olive oil

    For the Broccoli:

    • 2 cups broccoli florets
    • 1 tbsp olive oil
    • Salt & pepper (to taste)

    For the Bowl:

    1. 1 cup cooked white rice
    2. 1 cucumber (thinly sliced)
    3. 1/2 avocado (mashed)
    4. Pinch of salt

Instructions

  • Prepare the Chicken:

    • Heat 1 tbsp olive oil in a skillet over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
    • Stir in garlic, paprika, soy sauce, and honey. Cook for another 5 minutes, letting the sauce thicken and coat the chicken.
  • Roast the Broccoli:

    • Toss broccoli florets with 1 tbsp olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 15 minutes or sauté in a skillet until tender and slightly charred.
  • Assemble the Bowl:

    • In a serving bowl, add a portion of cooked rice. Arrange the glazed chicken, roasted broccoli, sliced cucumber, and mashed avocado on top.

 

  • Serve & Enjoy:

    • Add a sprinkle of salt to the avocado and an optional drizzle of soy sauce over the bowl for extra flavor.

Notes

  • Rice Alternatives: Swap white rice for brown rice or quinoa for a healthier option.
  • Garnish Ideas: Add sesame seeds or chopped green onions for extra flavor and texture.
  • Spice it up: Add Sriracha to the chicken glaze if you like a little heat!
