Description

A delicious combination of honey BBQ chicken and creamy garlic Parmesan potatoes. Perfect for a comforting and satisfying meal!


Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 3 tbsp butter
  • 1 garlic clove, minced
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix BBQ sauce and honey. Coat the chicken breasts with this sauce and place them on a baking sheet.
  3. Roast the chicken in the oven for 25-30 minutes or until fully cooked.
  4. While the chicken is baking, heat olive oil in a pan over medium heat. Add halved potatoes, salt, and pepper. Cook, stirring occasionally, for 10-12 minutes until tender.
  5. In a separate pan, melt butter over medium heat and sauté minced garlic until fragrant. Add heavy cream and bring to a simmer. Stir in Parmesan cheese, and cook until the sauce thickens, about 3 minutes.
  6. Pour the creamy garlic Parmesan sauce over the cooked potatoes, and serve with the honey BBQ chicken. Enjoy!

Notes

  • You can adjust the thickness of the creamy garlic sauce by adding more or less heavy cream.
  • If you want extra flavor, you can garnish the potatoes with more Parmesan cheese or fresh herbs like parsley.
  • For a spicier kick, you can add red pepper flakes to the garlic sauce.
