Ingredients

Scale
  1. For the Cabbage:

    • 1 large green cabbage, cut into 1.5-inch thick rounds
    • 3 tablespoons olive oil
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon paprika (optional, for extra depth)

    For the Garlic & Topping:

    1. 4 tablespoons olive oil
    2. 4 cloves garlic, minced
    3. 1 teaspoon Italian seasoning (or a mix of thyme and oregano)
    4. ½ cup Parmesan cheese, grated
    5. 2 tablespoons chopped fresh parsley (for garnish)
    6. 1 tablespoon lemon juice (optional, for brightness)

Instructions

  • Prepare the Cabbage:
Preheat your oven to 400°F (200°C). Slice the cabbage into 1.5-inch thick rounds, keeping the leaves intact.

  • Season & Roast:
Place the cabbage slices on a parchment-lined baking sheet. Drizzle olive oil over each slice and sprinkle with salt, pepper, and paprika. Roast in the preheated oven for 25 minutes, or until the edges are slightly crisp.

  • Make the Garlic Mixture:
In a bowl, mix together the olive oil, minced garlic, and Italian seasoning.

  • Add Garlic & Parmesan:
Brush the garlic mixture generously over the partially roasted cabbage slices. Sprinkle each slice with grated Parmesan cheese.

  • Final Roast & Serve:
Return the cabbage to the oven and bake for an additional 10-15 minutes, until the cheese is golden and bubbly. Remove from the oven, drizzle with lemon juice (if using), and garnish with fresh parsley.

  • Serve:
Serve warm and enjoy this delectable side dish!

Notes

  • You can use a mix of fresh herbs like thyme and oregano instead of Italian seasoning for a unique twist.
  • If you prefer, substitute Parmesan with a dairy-free cheese for a vegan version.
  • A squeeze of lemon juice after roasting brightens up the flavors and adds freshness.
