Description

This flavorful Garlic Parmesan Chicken and Potatoes recipe features tender chicken and roasted baby potatoes coated in savory garlic parmesan sauce. A perfect meal that’s both easy to make and packed with flavor


Ingredients

  1. 2 tablespoons olive oil
  2. 1 pound chicken tenderloins or breasts, cut into bite-size pieces
  3. 1 pound baby potatoes, halved
  4. 1 ½ teaspoons paprika
  5. 1 ½ teaspoons poultry seasoning
  6. 1 teaspoon black pepper
  7. 2 tablespoons butter
  8. 2 cloves garlic, minced
  9. ½ cup garlic parmesan wing sauce
  10. 1 cup shredded mozzarella

Instructions

  • Preheat the oven to 400°F and set out a baking sheet.
  • Trim any fat off the chicken and cut into bite-size pieces. Place the chicken in a large bowl and add 1 tablespoon of olive oil.
  • In another large bowl, add the halved baby potatoes and 1 tablespoon of olive oil.
  • In a small bowl, mix together the paprika, poultry seasoning, and pepper.
  • Sprinkle half the seasoning over the chicken and the other half over the potatoes. Toss both to coat evenly.
  • Spread the seasoned potatoes onto the baking sheet and roast for 20 minutes.
  • While the potatoes are cooking, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes, until browned and fully cooked.
  • Add butter and minced garlic to the skillet, stirring to combine.
  • Once the potatoes are roasted, add them to the skillet with the chicken and toss to combine.
  • Add garlic parmesan sauce and toss again.
  • Sprinkle shredded mozzarella over the chicken and potatoes, cover with a lid, and let it melt for about 5 minutes.

Notes

  • You can adjust the seasoning to taste if you prefer a stronger flavor.
  • Use chicken thighs for a juicier alternative to tenderloins or breasts.
  • For a spicy kick, consider adding red pepper flakes to the seasoning mix
