- 1 boneless skinless chicken thigh
- 2–3 whole carrots, peeled
- ¾ cup mashed potatoes (with skins)
- 1 tbsp olive oil or butter
- 1 tsp garlic (minced)
- ½ tsp Italian herbs
- Salt and black pepper, to taste
- Optional: fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Toss whole carrots in olive oil, Italian herbs, salt, and pepper. Roast for 25–30 minutes, or until tender and golden.
- While the carrots are roasting, season the chicken with minced garlic, Italian herbs, salt, and pepper. Pan-sear in butter over medium-high heat for 4–5 minutes per side, until golden and juicy.
- In the meantime, boil red or gold potatoes (skin on) until fork-tender. Mash them with butter, salt, and a splash of milk or cream for a creamy mashed potato base.
- Once everything is cooked, spoon mashed potatoes into your bowl, top with the seared chicken and roasted carrots, and drizzle any pan drippings over the top for extra flavor.
- Garnish with fresh parsley and serve warm for a hearty, cozy meal.

- If you prefer a lighter option, you can use olive oil instead of butter to cook the chicken.
