Description

A cozy and flavorful dinner featuring juicy pan-seared garlic herb chicken, roasted carrots, and creamy mashed potatoes, perfect for a comforting meal.


Ingredients

  • 1 boneless skinless chicken thigh
  • 23 whole carrots, peeled
  • ¾ cup mashed potatoes (with skins)
  • 1 tbsp olive oil or butter
  • 1 tsp garlic (minced)
  • ½ tsp Italian herbs
  • Salt and black pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss whole carrots in olive oil, Italian herbs, salt, and pepper. Roast for 25–30 minutes, or until tender and golden.
  2. While the carrots are roasting, season the chicken with minced garlic, Italian herbs, salt, and pepper. Pan-sear in butter over medium-high heat for 4–5 minutes per side, until golden and juicy.
  3. In the meantime, boil red or gold potatoes (skin on) until fork-tender. Mash them with butter, salt, and a splash of milk or cream for a creamy mashed potato base.
  4. Once everything is cooked, spoon mashed potatoes into your bowl, top with the seared chicken and roasted carrots, and drizzle any pan drippings over the top for extra flavor.
  5. Garnish with fresh parsley and serve warm for a hearty, cozy meal.

  • If you prefer a lighter option, you can use olive oil instead of butter to cook the chicken.
  • Feel free to use any variety of potatoes for the mashed potatoes based on your preference for texture.
