- 1 1/2 pounds bone-in, skin-on chicken thighs (4–6 thighs)
- Salt and pepper to taste
- 1 onion, diced
- 20 cloves garlic, peeled
- 2 teaspoons fresh thyme (or 1 teaspoon dry thyme), chopped
- 2 tablespoons flour
- 1 cup chicken broth
- 1/2 cup asiago cheese (or parmesan), grated
- Salt and pepper to taste
Instructions
- Brown Chicken: Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear for 3-5 minutes per side. Remove and set aside.
- Sauté Aromatics: Add diced onion and garlic to the skillet, cooking until onions are tender and lightly browned, about 3-5 minutes.
- Thicken Sauce: Stir in thyme and flour, cooking for 1 minute.
- Deglaze Pan: Add chicken broth, scraping up browned bits from the bottom of the pan.
- Add Cheese: Stir in asiago cheese, seasoning with salt and pepper.
- Cook Chicken: Return chicken to the skillet, cover, and either:
- Bake in a preheated 400°F (200°C) oven for 15 minutes.
- Simmer on the stovetop over medium-low heat for 15 minutes.
- Serve: Enjoy with mashed potatoes, rice, or crusty bread!

- For extra flavor, you can add a splash of white wine before deglazing the pan.
- For a thicker gravy, increase the flour by an extra tablespoon.
