Ingredients

Scale
  1. 12 oz linguine
  2. 1 lb sirloin steak (about 1 inch thick)
  3. 2 tablespoons butter
  4. 3 cloves garlic, minced
  5. ½ cup heavy cream
  6. ¼ cup grated Parmesan cheese (plus extra for serving)
  7. 1 teaspoon black pepper
  8. ½ teaspoon salt
  9. 2 tablespoons olive oil
  10. Fresh parsley, chopped (for garnish)

Instructions

  • Cook the linguine: Prepare the linguine according to the package directions until al dente. Drain and set aside, reserving ½ cup of pasta water.
  • Season the steak: While the pasta is cooking, season the sirloin steak with salt and pepper.
  • Sear the steak: Heat olive oil in a large skillet over medium-high heat. Sear the steak for 3-4 minutes per side for medium-rare, or adjust the time for your preferred doneness. Remove the steak from the skillet and allow it to rest for at least 5 minutes before slicing.
  • Make the garlic butter sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant (be careful not to burn it).
  • Add cream and Parmesan: Pour in the heavy cream and bring to a simmer. Lower the heat and stir in the Parmesan cheese until melted and smooth. Season with additional salt and pepper to taste.
  • Toss noodles and sauce: Add the cooked linguine to the skillet with the sauce, tossing to coat the noodles evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
  • Slice and combine: Slice the rested steak thinly against the grain. Add the sliced steak to the noodles and gently toss to combine.
  • Garnish and serve: Serve the Garlic Butter Steak Lightning Noodles immediately, topped with chopped fresh parsley and extra Parmesan cheese if desired.

Notes

  • Steak doneness: Adjust searing time based on your desired level of doneness. Use a meat thermometer for accuracy.
  • Add heat: Spice up the sauce by adding red pepper flakes for a little kick.
  • Add vegetables: Enhance the dish by sautéing mushrooms, spinach, or asparagus in the skillet before making the sauce.
  • Zesty touch: Add a teaspoon of lemon zest to the sauce for a refreshing twist.
  • Wine option: Deglaze the skillet with a splash of white wine after cooking the garlic for extra flavor depth.
