Steak Bites

  • 2 lbs steak (filet, ribeye, sirloin, etc.)
  • 45 tbsp avocado oil

Parmesan Cream Sauce

  • 5 tbsp butter, divided
  • 10 cloves garlic, minced and divided
  • 1½ cups heavy cream
  • 2 green onions, diced (green and white parts)
  • 1 tsp red pepper flakes (less if desired)
  • ⅔ cup grated Parmesan cheese

Cheesy Mashed Potatoes

  • 4 lbs russet potatoes
  • 1 cup warmed half and half
  • 6 tbsp salted butter, melted
  • ¾ cup shredded Monterey Jack, mozzarella, pepper jack, or similar cheese
  • 1 tsp garlic powder
  • ¾ tsp salt
  • Pepper to taste (about ½ tsp)

Homemade Blackened Seasoning

  • 2 tbsp smoked paprika (or regular paprika)
  • 1 tbsp cayenne pepper
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 tsp salt
  • ½ tsp dried thyme
  • ½ tsp dried oregano

Instructions

  1. Toss steak bites in the homemade blackened seasoning until evenly coated.
  2. Heat avocado oil in a large skillet over high heat. Add steak bites in a single layer (work in batches if needed) and sear for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
  3. In the same skillet, melt 2 tbsp butter and sauté half the minced garlic until fragrant, about 1 minute.
  4. Stir in heavy cream, green onions, red pepper flakes, and Parmesan cheese. Simmer over medium heat, stirring frequently, until sauce thickens, 3–5 minutes.
  5. Remove from heat and stir in remaining 3 tbsp butter and remaining minced garlic. Set aside.
  6. For mashed potatoes: Peel and cube potatoes, then boil until fork-tender. Drain and mash.
  7. Mix in warmed half and half, melted butter, shredded cheese, garlic powder, salt, and pepper until smooth and creamy.
  8. Plate mashed potatoes, top with steak bites, and generously drizzle with Parmesan cream sauce.

Notes

  • Use sirloin for a leaner cut or ribeye for extra richness.
  • Control the heat by adjusting red pepper flakes and cayenne in the seasoning.
  • Leftover sauce is delicious over pasta, veggies, or grilled chicken!
  • Make the mashed potatoes ahead and reheat gently with extra cream or butter.
