- 1 lb ribeye or sirloin steak (room temp)
- 1 sheet puff pastry (thawed) or 2 large croissants
- 6 oz brie cheese, sliced
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- Salt & pepper to taste
- 1 egg (for egg wash)
Instructions
- Season the steak with salt and pepper.
- Heat 1 tbsp butter in a skillet over medium-high heat. Sear steak for 2–3 minutes per side for medium-rare. Let rest for 10 minutes, then slice thinly.
- Melt remaining 1 tbsp butter in a small pan. Stir in minced garlic and chopped parsley to make garlic butter. Set aside.
- If using puff pastry, roll it out slightly. If using croissants, slice them open.
- Place brie slices in the center of the pastry or croissants. Layer sliced steak on top.
- Drizzle garlic butter over the steak and brie filling.
- Fold and seal the puff pastry tightly over the filling, or close the croissants.
- Brush with egg wash for a golden finish.
- Bake at 400°F (200°C) for 20–25 minutes or until golden and flaky.
- Cool for 5 minutes before slicing. Garnish with extra parsley and serve warm.

- For extra flavor, marinate the steak in garlic and herbs for 30 minutes before searing.
- Use store-bought croissants for a quicker version.
