Ingredients

Scale
  • 1 lb ribeye or sirloin steak (room temp)
  • 1 sheet puff pastry (thawed) or 2 large croissants
  • 6 oz brie cheese, sliced
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • Salt & pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Season the steak with salt and pepper.
  2. Heat 1 tbsp butter in a skillet over medium-high heat. Sear steak for 2–3 minutes per side for medium-rare. Let rest for 10 minutes, then slice thinly.
  3. Melt remaining 1 tbsp butter in a small pan. Stir in minced garlic and chopped parsley to make garlic butter. Set aside.
  4. If using puff pastry, roll it out slightly. If using croissants, slice them open.
  5. Place brie slices in the center of the pastry or croissants. Layer sliced steak on top.
  6. Drizzle garlic butter over the steak and brie filling.
  7. Fold and seal the puff pastry tightly over the filling, or close the croissants.
  8. Brush with egg wash for a golden finish.
  9. Bake at 400°F (200°C) for 20–25 minutes or until golden and flaky.
  10. Cool for 5 minutes before slicing. Garnish with extra parsley and serve warm.

Notes

  • For extra flavor, marinate the steak in garlic and herbs for 30 minutes before searing.
  • Use store-bought croissants for a quicker version.
  • Try adding caramelized onions or mushrooms for a deeper flavor profile.
