Tart Shell:

2 tbsp cornstarch
1 tbsp butter
For Assembling:
Fresh fruit (strawberries, kiwis, mangoes, blackberries)
2 tbsp apricot jam (for glaze)
2 tbsp water
Prepare the Tart Shell:
Preheat the oven to 375°F (190°C).
Mix flour, powdered sugar, and cold butter in a bowl. Gradually add cold water (1–2 tbsp) until the dough comes together.
Chill the dough for 30 minutes.
Roll out the dough and press it into a tart pan. Bake for 25 minutes or until golden brown. Let cool.
Make the Pastry Cream:
In a saucepan, heat the milk and vanilla over medium heat until just about to boil.
In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.

In a small saucepan, combine apricot jam and water. Heat gently until melted and smooth.
