Ingredients

Tart Shell:

1 1/4 cups all-purpose flour

1/4 cup powdered sugar

1/2 cup cold butter

1–2 tbsp cold water
Pastry Cream:

1 cup milk

1 tsp vanilla extract

3 egg yolks

1/4 cup granulated sugar

2 tbsp cornstarch

1 tbsp butter
For Assembling:

Fresh fruit (strawberries, kiwis, mangoes, blackberries)

2 tbsp apricot jam (for glaze)

2 tbsp water

Instructions

Prepare the Tart Shell:

Preheat the oven to 375°F (190°C).

Mix flour, powdered sugar, and cold butter in a bowl. Gradually add cold water (1–2 tbsp) until the dough comes together.

Chill the dough for 30 minutes.

Roll out the dough and press it into a tart pan. Bake for 25 minutes or until golden brown. Let cool.

Make the Pastry Cream:

In a saucepan, heat the milk and vanilla over medium heat until just about to boil.

In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.

Slowly pour the hot milk mixture into the egg yolk mixture while whisking constantly.

Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in butter.

Let the cream cool, then refrigerate for at least 1 hour.

Assemble the Tart:

Fill the cooled tart shell with the chilled pastry cream.

Arrange the fresh fruit on top of the cream in a decorative pattern.

In a small saucepan, combine apricot jam and water. Heat gently until melted and smooth.

Brush the glaze over the fruit to give the tart a shiny finish.
