Description

This Fruit Tart is a beautiful and delicious dessert featuring a buttery tart shell, smooth pastry cream, and a variety of fresh fruits like strawberries, kiwis, mangoes, and blackberries. The tart is the perfect balance of sweetness and freshness, with an optional apricot glaze for extra shine. A crowd-pleaser for any occasion!

  1. Tart Shell:

    • 1 1/4 cups all-purpose flour

    • 1/4 cup powdered sugar

    • 1/2 cup cold butter

    • 12 tbsp cold water

    Pastry Cream:

    • 1 cup milk

    • 1 tsp vanilla extract

    • 3 egg yolks

    • 1/4 cup granulated sugar

    • 2 tbsp cornstarch

    • 1 tbsp butter

    For Assembling:

    1. Fresh fruit (strawberries, kiwis, mangoes, blackberries)

    2. 2 tbsp apricot jam (for glaze)

    3. 2 tbsp water


Instructions

  • Prepare the Tart Shell:

    • Preheat the oven to 375°F (190°C).

    • Mix flour, powdered sugar, and cold butter in a bowl. Gradually add cold water (1–2 tbsp) until the dough comes together.

    • Chill the dough for 30 minutes.

    • Roll out the dough and press it into a tart pan. Bake for 25 minutes or until golden brown. Let cool.

  • Make the Pastry Cream:

    • In a saucepan, heat the milk and vanilla over medium heat until just about to boil.

    • In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.

    • Slowly pour the hot milk mixture into the egg yolk mixture while whisking constantly.

    • Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened.

    • Remove from heat and stir in butter.

    • Let the cream cool, then refrigerate for at least 1 hour.

  • Assemble the Tart:

    • Fill the cooled tart shell with the chilled pastry cream.

    • Arrange the fresh fruit on top of the cream in a decorative pattern.

  • Optional Glaze:

    • In a small saucepan, combine apricot jam and water. Heat gently until melted and smooth.

    • Brush the glaze over the fruit to give the tart a shiny finish.

 

  • Chill & Serve:

    • Chill the tart for at least 30 minutes before serving. Slice and enjoy!


Notes

  • For a more elegant presentation, use a variety of colorful fruits.

  • If you prefer a lighter glaze, reduce the apricot jam to a thinner consistency with water.

 

  • The tart shell can be made in advance and stored for up to 2 days in an airtight container.
