Ingredients

Scale

Soft Sugar Cookies:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt

Cream Cheese Frosting:

  • 4 tablespoons salted butter
  • 1 (8-ounce) package cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla bean paste or extract

Fresh Fruits (for topping):

  • Strawberries
  • Kiwis
  • Raspberries
  • Blueberries
  • Mangos
  • Peaches

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add egg, egg yolk, and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients until fully combined.
  5. Scoop dough into balls and place on the baking sheet, flattening slightly.
  6. Bake for 8–10 minutes or until the edges are just set. Let cool completely.
  7. To make the frosting, beat the butter and cream cheese together until smooth.
  8. Add powdered sugar and vanilla, and mix until creamy.
  9. Spread frosting over each cooled cookie and top with an assortment of fresh sliced fruits.
  10. Serve immediately or chill until ready to enjoy.

Notes

  • Pat fruit dry before adding to cookies to prevent sogginess.
  • Use any seasonal fruits you love—grapes, blackberries, or pineapple work great too.
  • Cookies can be baked and frosted a day ahead; add fruit just before serving for best texture.
