Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg, egg yolk, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients until fully combined.
- Scoop dough into balls and place on the baking sheet, flattening slightly.
- Bake for 8–10 minutes or until the edges are just set. Let cool completely.
- To make the frosting, beat the butter and cream cheese together until smooth.
- Add powdered sugar and vanilla, and mix until creamy.
- Spread frosting over each cooled cookie and top with an assortment of fresh sliced fruits.
- Serve immediately or chill until ready to enjoy.
