  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1½ teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • ½ teaspoon salt
  • 1⅔ cups all-purpose flour
  • 1 tablespoon milk

For the Cream Cheese Frosting

  • 2 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

Prepare the Cookie Bars

  1. Preheat the oven to 350°F (175°C). Grease or line a baking pan.
  2. Cream together butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract.
  4. Add salt and flour, mixing until combined. Stir in milk.
  5. Spread the dough evenly in the prepared pan.
  6. Bake for 20-25 minutes or until edges are golden and a toothpick inserted comes out clean.
  7. Let cool completely.

Make the Cream Cheese Frosting

  1. Beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, salt, vanilla extract, and milk; beat until fluffy.
  3. Spread frosting evenly over cooled cookie bars.
  4. Slice into bars and serve.

Notes

  • Make sure the cookie bars are completely cool before frosting to avoid melting.
  • For an extra almond punch, sprinkle sliced almonds on top of the frosting.
  • Store bars in an airtight container in the fridge for up to 5 days.
  • For a dairy-free version, substitute butter and cream cheese with plant-based alternatives.
  • These bars freeze well—wrap tightly and thaw before serving.
