Description

Fried Piña Colada Rings are crispy, golden pineapple rings coated in sweet shredded coconut and served with a creamy pineapple cream cheese dipping sauce. A tropical treat perfect for snacking or parties.

  • 8 pineapple rings (fresh or canned)
  • 1 cup pineapple juice (for soaking)
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened shredded coconut
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons pineapple juice (reserved for the sauce)

Instructions

  1. Soak the Pineapple Rings: Place the pineapple rings in a shallow dish and pour 1 cup of pineapple juice over them. Let them soak for about 30 minutes to an hour. Once done, drain and pat dry with paper towels.
  2. Prep the Breading Station: Prepare three shallow bowls: 1st bowl – Add flour. 2nd bowl – Whisk eggs and coconut milk. 3rd bowl – Add shredded coconut.
  3. Coat the Pineapple Rings: Dredge each pineapple ring in the flour, dip it in the egg-coconut milk mixture, and press it into the shredded coconut for an even coating.
  4. Fry to Golden Perfection: Heat 1 inch of vegetable oil in a frying pan over medium heat. Once the oil reaches 350°F (175°C), fry the coated pineapple rings for 1 minute per side until golden and crispy. Transfer to a paper towel-lined plate to drain.
  5. Make the Creamy Dipping Sauce: In a small bowl, beat together cream cheese and powdered sugar. Add 2 tablespoons of reserved pineapple juice and mix into a creamy sauce.
  6. Serve and Enjoy: Arrange the fried pineapple rings on a plate and serve with the pineapple cream cheese dipping sauce on the side.
