Description

This Fresh Strawberry Cream Cheese Bread is a perfect combination of moist, fluffy bread with a creamy glaze. The subtle cinnamon flavor complements the fresh strawberries, while the cream cheese glaze adds a delightful richness. It’s a great treat for breakfast or dessert!

  1. Bread Base:

    • 4 ounces cream cheese, room temperature
    • 1 cup granulated sugar
    • 2 large eggs, beaten
    • ½ cup buttermilk
    • ⅓ cup plus 1 tablespoon plus 1 teaspoon vegetable oil
    • 1 teaspoon pure vanilla extract

    Dry Ingredients:

    • 2 cups all-purpose flour, sifted then measured
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ¼ teaspoon cinnamon
    • 3 tablespoons dry strawberry Jello (not the liquid kind)

    Strawberry Mixture:

    • 2 cups fresh strawberries, chopped and mashed with 2 tablespoons sugar and 1 tablespoon flour
    • 1 tablespoon strawberry juice (reserved from mashed berries)

    Cream Cheese Glaze:

    1. 4 ounces cream cheese, softened
    2. 2 cups confectioners’ sugar
    3. ¼ teaspoon vanilla extract
    4. 3 tablespoons heavy cream or whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Beat the cream cheese until smooth, then add sugar and beat until fluffy. Mix in the eggs, then whisk in buttermilk, vegetable oil, and vanilla extract.
  3. Sift together the flour, baking powder, salt, cinnamon, and dry strawberry Jello.
  4. Gently fold the dry ingredients into the wet ingredients until just combined. Then, fold in the prepared strawberry mixture (reserving some strawberries for topping), and add the strawberry juice.
  5. Reduce the oven temperature to 325°F (163°C) and bake for 50-55 minutes, or until a toothpick comes out clean. Let the bread cool completely in the pan.
  6. While the bread is cooling, prepare the cream cheese glaze by beating the cream cheese until smooth. Add the confectioners’ sugar, vanilla extract, and heavy cream or milk. Mix until creamy.
  7. Once the bread is fully cooled, drizzle the cream cheese glaze over the top and garnish with the reserved strawberries.

Notes

  • For extra flavor, you can add a pinch of nutmeg or allspice to the dry ingredients.
  • If you want a thicker glaze, reduce the amount of cream or milk to your desired consistency.
