- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (10.5 oz) French onion soup
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded Swiss cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook for about 5 minutes until soft and lightly golden. Add minced garlic and cook for 1 more minute until fragrant.
- Add the ground beef to the skillet, breaking it up as it cooks. Cook until browned, about 5–7 minutes. Drain excess fat if needed.
- Stir in French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring everything to a gentle simmer.
- Stir in the rice, mixing until well combined. Remove from heat and transfer everything into the prepared baking dish.
- Cover with aluminum foil and bake for 30 minutes. Uncover, sprinkle Swiss cheese evenly on top, and return to the oven for 10–15 minutes, or until bubbly and melted.
- Let it rest a few minutes before slicing to enjoy those creamy, cheesy layers!
Notes
- You can add more vegetables like bell peppers or mushrooms for extra flavor.
- For a crispier top, you can broil the casserole for the last 1–2 minutes of baking.
- If you prefer a different cheese, mozzarella or cheddar would also work well in place of Swiss.
