Description

This French Onion Ground Beef and Rice Casserole combines savory ground beef, aromatic onions, and Swiss cheese in a rich, flavorful casserole that’s baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and cook for about 5 minutes until soft and lightly golden. Add minced garlic and cook for 1 more minute until fragrant.
  3. Add the ground beef to the skillet, breaking it up as it cooks. Cook until browned, about 5–7 minutes. Drain excess fat if needed.
  4. Stir in French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring everything to a gentle simmer.
  5. Stir in the rice, mixing until well combined. Remove from heat and transfer everything into the prepared baking dish.
  6. Cover with aluminum foil and bake for 30 minutes. Uncover, sprinkle Swiss cheese evenly on top, and return to the oven for 10–15 minutes, or until bubbly and melted.
  7. Let it rest a few minutes before slicing to enjoy those creamy, cheesy layers!

Notes

  • You can add more vegetables like bell peppers or mushrooms for extra flavor.
  • For a crispier top, you can broil the casserole for the last 1–2 minutes of baking.
  • If you prefer a different cheese, mozzarella or cheddar would also work well in place of Swiss.
